Restaurant-Style Chana Masala at Home
Chole chana masala is a delicious dish that is popular all over India. This savory curry is made with white chickpeas, tomatoes, onions and traditional Indian spices and is served with chapatis and parathas as an evening snack or dinner.

1 tablespoon of cooking oil, 1/2 cup kabul kadle, 1 small onion, 2 small tomatoes, 1/2 tsp cumin seeds, 1 pulao or cinnamon leaf, 1 cardamom, 1 tsp ginger garlic paste, 1/2 tsp tamarind powder, 1/4 tsp garam masala, 1 tsp coriander powder, 1/4 tsp cumin powder, 1/4 tsp turmeric powder, 1/1 tsp chole masala, 1 tsp amchur powder, 1 tbsp kasuri methi (if required) and salt to taste.
First of all, soak the white gram kabul kadle for 5 - 6 hours. Then put the soaked gram and water in the cooker and add salt and turmeric and put it in the cooker. Now close the cooker and cook on medium flame till 4-5 whistles. Cook the kadle dal well until it becomes soft.

Now heat the oil in a pan. Once oil is hot, add cumin, pulao and cinnamon, cardamom. Then add onion and fry until brown. After frying the onions, add garlic and ginger paste.

Now add tomato puree and mix.

Immediately after mixing, add salt, turmeric, chilli powder, cumin powder, coriander powder.

Add boiled gram and 2-3 teaspoons of boiled gram water and stir cook for 2 minutes. Now add dry mango powder and chole masala to it and close the lid and cook on low flame for four to five minutes.

Now remove the lid and see that the water has dried up and a thick gravy has formed. Now the chann masala is ready. While eating, keep a lemon wedge with it and serve it with puris or parathas.
